A happy-to-go lunch choice is a sandwich. A sandwich is always the finest choice for a healthy supper when you're in a hurry. We prefer handmade sandwiches to junk food from outside. And, Always get bread from a small, nearby bakery to ensure a fresh supply. If you enjoy making your own bread, bake some ahead of time and treat your family to scrumptious, nutritious sandwiches. A vegetarian delicacy from India called Masala Vegetable Sandwich with Ketchup is India's tastiest and most gratifying snack. This lactose-free, high-antioxidant meal can be had for breakfast, midday, dinner, or even as a snack throughout the day. Masala  Vegetable sandwiches have few calories but are more nutritionally diverse and add a healthy dose of vitamins, minerals, and fibre. This Tiffin Sandwich Recipe is better with a little ketchup on the side. As a healthy comfort food combo, serve it with orange juice or fresh fruit juice.

1 cup boiled, peeled, and mashed ( 4 – 5 small )-Potatoes 

½ tsp or more according to taste-Red chilli powder

2 tsp according to taste-Lemon juice

Boil, peel, and mash potatoes. Put them aside. Boil green peas and set them aside. Chop each veggie, then set them aside. in a pan, head-filtered oil, add mustard seeds. Add the cumin seeds and let them brown once they begin to sputter. Add hing, curry leaves, and green chilis. Saute for 2-3 minutes at least. Add onions, a pinch of salt, stir for a while, then add turmeric powder. Add all of the chopped vegetables. Be sure to thoroughly combine. Cook for 4-5 minutes with a cover on. Vegetables will lose their crispness if they are overcooked, so don't overcook, mix them well and add chilli powder. Now, add the main ingredients mashed potato, mix well, and adjust the salt. 

To prevent the mixture from sticking to the pan, keep stirring over a low flame for 2-3 minutes after stirring, turn off the switch. Add coriander and lemon juice and mix well, then keep them aside. Bread edges should be trimmed. Spread butter evenly across the bread, if desired. Take 2-3 tsb and veg masala and spread properly over the bread, put another slide on top of it, then roast it on tawa by applying some butter on both sides, and keep roasting until both sides are browned. Now, do this for all veg-loaded sandwiches. Serve them with ketchup, and enjoy!
